I just have to rave about this recipe I tried today. I made a double batch so that I could freeze one batch. Super yummy w/o being bland. I was afraid they might be too heavy and "germy" tasting but these are great! I love the fact that they are sugar free (I used sugar free applesauce and agave necter instead of corn syrup). The bran and oats are a much better alternative to the flour based muffins for my diabetic hubby. You have got to try these, my lil monster just gobbled them up!
I'm a 20 something working mommy and wife caught somewhere between my dreams and reality. I grew up in suburbia but owned horses and vacationed on a farm in Indiana. A city girl with a country heart went to college with plans of getting away from it all. Funny how things work out. I never found my cowboy but instead I found myself wearing heels working in a big skyscraper downtown, commuting in my little black coupe from my super suburbia house. I'm the quintessential middle class working mommy with a little bit of country that is still alive and kicking.

I have always loved to cook for as long as I can remember. I remember growing up pretending to be a chef at the kitchen table. I'd talk to the TV like I had an audience and was a pro. My chef ways disappeared while in high school and I didn't really get back into cooking until college. On those few and far between occasions when I actually had cash to burn I'd head to the grocery store and call my friends over to try out my new recipes. Now that I'm newly married and have a toddler at home I find myself torn between cooking the meals I love and finding foods that my little monster can and will eat. I need all the inspiration I can get.
